Don't be scared by the otherworldly colour of this pudding. It may look like something out of a swamp, but this vegan matcha banana chia pudding is highly nutritious and customizable. Top it with some coconut milk and a sprinkle of granola, add whatever seeds and nuts you like. Let me know how you make it, for yourself!
Recipe:
1 cup organic soy milk or non dairy milk of your choice
1 tbsp. maple syrup
1 tbsp matcha powder (or less for a milder taste)
1 banana
1/4 cup chia seeds
Method:
In a high speed blender, add soy milk, maple syrup, banana and matcha powder and blend until smooth and until matcha powder is thoroughly dissolved. Pour into a sealable container and add chia seeds, whisking with a fork until all seeds are coated. Put on the lid and store in the fridge, overnight, stirring once, before bed.
In the morning you'll have a rich and thick pudding that you can top with your choice of seeds, nuts or granola and enjoy for breakfast or dessert!
